Potato Bake in Cream
Serves 4
4 medium POTATOES
1 cup CREAM light or heavy
Preheat oven to 190˚C/375˚F
Thinly slice the potatoes with a sharp knife or with a mandolin.
In a microwave-proof and also oven-proof dish layer half of sliced potatoes and cover with half the cream. Repeat layers finishing with a layer cream on top.
Microwave on high for about 10 minutes and then pop the same dish into the oven for 20-30 minutes until golden brown and bubbling around the edges.
Remove from oven and let sit for a few minutes before serving.
Notes and Variations:
THIS IS ALSO KNOWN AS A POTATO GRATIN.
Vegetables such as PUMPKIN, SWEET POTATO or PARSNIP that have been sliced thinly can be a variation or added to the potatoes.
A layer of BABY ENGLISH SPINACH can be added.
